It doesn’t make sense in “normal” English. It’s maybe something someone from a state in the Bible Belt of America could say but I don’t know, I’m not from there.

To be honest, "I never met a one like you" is just more musical, and sounds more rhythmical, suitable for a song. You want to sing it this way, but not write.

It means "person" , either a man or a woman.    I haven't read the lyrics, but if the song is about a woman then it is correct.

I'd never heard it used before the song, but I have heard one of my favourite singer-songwriters (Cory Branan) say it, and he's from Memphis. But he's also an MK fan, so maybe he got it from him!
