Looking at the lyrics, isn't he just referring to a woman he likes, he has never met a one (woman) like you.

To be honest, "I never met a one like you" is just more musical, and sounds more rhythmical, suitable for a song. You want to sing it this way, but not write.

It means "person" , either a man or a woman. I haven't read the lyrics, but if the song is about a woman then it is correct.
